One dish from Punjab that gives the strongest memories of my cultural heritage is Sarson da Saag with Makki di Roti. This dish is a symbol of home, warmth, and togetherness. Sarson da Saag is made from mustard greens, often mixed with spinach and bathua, slow-cooked for hours until the flavors deepen. Then garlic, green chilies, ginger, and a generous spoon of homemade butter are added. The aroma itself feels like winter mornings in Punjab, when fog covers the fields and families gather in warm kitchens. Makki di Roti, made from coarse cornmeal, is slightly crisp on the outside and soft inside, perfectly balancing the earthy bitterness of the saag. What makes this dish special is its connection to Punjab’s land and farming culture. The mustard greens come straight from the fields, reflecting the hard work and pride of Punjabi farmers. Eating this meal, especially with white butter, jaggery, and a glass of lassi, reminds me of simple village life, shared meals, and stories told around the chulha (traditional stove). The flavors are rustic, spicy, and strong enough to stay in memory long after the meal ends. For me, Sarson da Saag and Makki di Roti are not just traditional dishes; they are a comforting reminder of my roots, my people, and the soul of Punjab.
